Super Green Dressing

This is a simple & quick recipe for a dressing that is delicious on almost anything! It is vegan and nut-free and can be used as a dressing for a salad, to drizzle on steamed veg, a sauce for pasta, or to use as a dip for your crudites or sweet potato fries. If you prefer it to be a thicker consistency for a pasta sauce or dip, substitute 1 cup (½ can) chickpeas for the plant milk. Packed with greens, this sauce is full of phytonutrients, minerals and vitamins. And the tofu adds in the essential protein.

Ingredients

1 300g container silken tofu, preferably organic

1 cup spinach

½ cup coriander

½ cup parsley

¼ cup mint

¼ cup dill

2 tablespoon nutritional yeast

zest of 1 lemon

3 tablespoons lemon juice

a 1cm chunk of ginger

1 teaspoon date or maple syrup

2 tablespoons olive oil

¼ cup oat/almond milk

1 garlic clove

salt to taste

Method

Add all the ingredients to a blender, and blend until smooth. You can store it in an airtight jar in the fridge for up to 3 days so make a batch at the start of the week.
